TIPS
Bison
meat has less fat and 30% less water than other red meats. On the
average it takes a third less time to cook than other red meats.
Grilled
Bison Steaks - Grill steaks 4-6 inches above hot coals (325°).
Check
frequently for doneness:
rare: 6-8 min. (1" thick)
medium: 8-10 min. (1" thick)
Steaks
Recommended: Rib Eye, Tenderloin, Sirloin and N.Y. Strip
Oven
Broiling - Lower the rack one notch further away from the heat
than where you broil beef.
Roasting
- If you normally roast meat at 325°, turn it down to 275°
and roast the same length of time.
